Red Cabbage Chicory Salad with Radishes

Ingredients

  • 300 g red cabbage
  • Salt
  • 1 pinch raw cane sugar
  • 2 red chicory heads
  • 1 bunch radishes
  • 2 red onions
  • 0.5 bunch Parsley (10 g)
  • 1 tsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 2 tbsp walnut oil
  • 2 tbsp olive oil
  • Pepper

Instructions

    Clean, wash and shred the cabbage into fine strips. In a bowl with a little salt and 1 pinch of sugar, knead vigorously for 5 minutes. Then let the cabbage rest for 30 minutes.

    Meanwhile split the chicory leaves, cut out stems, rinse and dry them. Clean, wash and slice radishes thinly. Peel, halve and slice onions into fine strips. Wash parsley, dry, shake and chop.

    Whisk together mustard, vinegar, walnut oil, olive oil, salt and pepper to make a dressing. Arrange cabbage with chicory, radish and onion strips on a platter, drizzle with dressing and sprinkle with parsley.
