Tomato mint salad from Spoonsparrow: colorful, aromatic and healthy! Lycopene from the tomatoes provides cell protection.

Ingredients

  • 1 kg tomatoes (various sizes; yellow and red)
  • 1 handful Mint (5 g)
  • 1 Handful Parsley (5 g)
  • 4 tbsp white wine vinegar
  • 4 tbsp olive oil
  • Salt
  • pepper (ground)
  • 0.5 tsp Pul Biber (chili seasoning)

Instructions

    Wash the tomatoes and remove stems. Cut each tomato in half according to size, then slice into wedges or rounds. Arrange the colorful pieces on plates.

    Rinse the herbs, shake dry, pluck leaves and roughly chop them.

  3. 3.

    For the vinaigrette whisk vinegar with oil, salt and pepper and taste. Drizzle over the salad and sprinkle with herbs. Finish with Pul Biber and serve the tomato mint salad.
