Asparagus pasta salad is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 400 g Whole wheat penne
  • Salt
  • 800 g green asparagus
  • 4 tbsp pine nuts
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 tsp sharp mustard
  • 1 tsp Honey
  • 1 bunch herbs (e.g., tarragon, chives, dill)
  • Pepper

Instructions

    Cook pasta in boiling salted water according to package instructions until al dente. Drain and rinse with cold water, then set aside.

    Wash asparagus and trim woody ends. Cut into about 3 cm pieces and boil in salted water for approximately 6 minutes. Remove, cool under cold running water, and drain.

    Toast pine nuts in a dry pan until golden brown, then let them cool. For the vinaigrette whisk vinegar with lemon juice, 2–3 tbsp water, oil, mustard, and honey. Wash herbs, shake dry, chop, and add to the vinaigrette. Season with salt and pepper.

    Combine pasta and asparagus with the vinaigrette, then distribute onto bowls. Sprinkle with pine nuts.
