The strawberry pasta salad from Spoonsparrow is a fruity and fresh twist on the classic.

Ingredients

  • 400 g short tube pasta (e.g., ditalini)
  • Salt
  • 5 tbsp olive oil
  • 0.5 cucumber
  • 80 g arugula (1 bundle)
  • 200 g mixed salad greens
  • 100 g red cabbage
  • 200 g strawberries
  • 30 g capers (2 tbsp)
  • 1 lemon (juice)
  • 1 tsp Mustard
  • 1 tsp Honey
  • Pepper

Instructions

    Cook pasta according to package instructions in plenty of boiling salted water until al dente, then drain and rinse. Toss with 1 tbsp oil and let cool.

    Meanwhile, peel and dice the cucumber, wash and dry the arugula and salad greens, trimming if necessary. Slice the red cabbage into thin strips. Peel, wash, and cut strawberries crosswise into slices.

    Combine pasta, cucumber cubes, arugula, salad greens, and red cabbage in a large bowl and mix well. Fold in capers and strawberries.

    Whisk together lemon juice, mustard, honey, salt, pepper, and the remaining oil to make the dressing. Pour over the salad, toss, and let rest briefly before serving.
