White Asparagus with Herb Yogurt

White asparagus with herb yogurt from Spoonsparrow brings spring to the plate!

Ingredients

  • 2 kg white asparagus
  • Salt
  • 1 tbsp honey
  • 3 tbsp Lemon juice
  • 80 g arugula (2 handfuls)
  • 20 g pimpinella (1 handful)
  • 20 g chives (1 bunch)
  • 1 box watercress
  • 350 g yogurt (1.5% fat)
  • Pepper

Instructions

    Peel the asparagus and cut off the woody ends. In a large pot bring plenty of salted water with honey and 2 tbsp lemon juice to a boil. Add the asparagus and simmer gently for about 20 minutes.

    Meanwhile wash and dry the arugula, pimpinella, and chives. Set aside some leaves of arugula and pimpinella for garnish and chop the rest. Trim the watercress, cut it finely, and mix it with the herbs into the yogurt. Season with remaining lemon juice, salt, and pepper.

    Lift the asparagus from the water and arrange on four plates. Drizzle with herb yogurt and sprinkle with the remaining herbs.
