Grilled Asparagus with Citrus Dressing

Ingredients

  • 4 tomatoes
  • 8 tbsp olive oil
  • powdered sugar
  • 600 g asparagus
  • 4 tbsp freshly squeezed grapefruit juice
  • 2 tbsp freshly squeezed orange juice
  • 1 tsp Honey
  • 1 tbsp freshly sliced coriander leaves
  • coriander leaves for garnish
  • grated parmesan for serving

    Preheat the oven to 100°C fan.

    Heat tomatoes briefly, shock in cold water, peel, quarter and seed. Mix with 4 tbsp olive oil and spread on a baking tray. Sprinkle powdered sugar and confire in the oven for about 1.5 hours until just slightly juicy. Turn occasionally and sprinkle more powdered sugar. Remove from oven and let cool. Dice everything into small cubes except for four pieces. Peel the lower third of the asparagus and slice one spear lengthwise into thin strips with a vegetable peeler. Cut the remaining asparagus in half, salt, pepper, drizzle with 2 tbsp olive oil and grill on the grill turning occasionally for about 6 minutes. Mix the fruit juices with honey and stir in the remaining oil. Add coriander and diced tomatoes and season with salt. Arrange grilled asparagus on plates and garnish with asparagus strips, tomato quarters and coriander leaves. Drizzle with dressing and sprinkle grated parmesan before serving.
