Ingredients

  • 350 g mixed leafy greens (e.g., arugula, red oak leaf, Lollo bionda)
  • 100 g cocktail tomatoes
  • 1 yellow bell pepper
  • 1 tbsp Lemon Juice
  • 3 tbsp apple cider vinegar
  • 1 tsp Honey
  • 4 tbsp Vegetable oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Combine the two types of cream cheese and season with salt, pepper, and a splash of lemon juice. Wash the chives, pat dry on paper towels, pluck the flowers, and slice the stems into fine ribbons.

    Form small balls from the cream cheese mixture and roll them in the chive ribbons.

    Wash the salad leaves, gently spin dry, and tear into bite-sized pieces. Rinse the tomatoes and halve them. Wash the pepper, halve it, remove seeds, and cut into thin strips. Whisk together lemon juice, vinegar, honey, oil, salt, and pepper for the dressing and adjust seasoning. Toss the leafy greens, tomatoes, and peppers with the dressing in a bowl, then arrange on plates. Top with chive cheese bites and garnish with chive flowers before serving.
