Ingredients

  • 500 g pre‑cooked mussel meat
  • Zitronen (Saft)
  • Salz
  • Pfeffer
  • 20 g fresh ginger
  • 2 Garlic cloves
  • 2 Spring Onions
  • 500 g sugar snap peas
  • 50 g sesame seeds
  • 4 tbsp oil
  • 2 tbsp Soy sauce
  • 50 ml dry white wine
  • 2 tbsp hoisin sauce
  • 250 g Chinese egg noodles

Instructions

    Wash mussels under cold water, pat dry, drizzle with lemon juice and season with salt and pepper.

    Peel and finely chop ginger and garlic cloves. Trim and dice spring onions. Clean, rinse, and pat sugar snap peas dry.

    Heat wok until hot, then stir‑roast sesame seeds, remove and set aside on a plate.

    Heat 3 tbsp oil in the wok. Add mussels and sear each side for 1 minute, remove and place on a plate. Stir‑fry ginger, garlic, and spring onions with remaining oil.

    Cook noodles according to package instructions.

    Add sugar snap peas and stir for several minutes. Season with salt, pepper, soy sauce, white wine, and hoisin sauce. Fold in mussels and toasted sesame seeds, taste, and serve on Chinese egg noodles.
