Grilled Chicken

Ingredients

  • 1 chicken (pre-cooked, 1.4 kg)
  • 4 stalks Thai basil
  • 1 Garlic clove
  • 0.5 untreated lemon (juice and zest)
  • olive oil
  • Salt
  • pepper (ground)
  • 1 tsp Sweet paprika powder

Instructions

    Preheat the grill.

    Wash the meat, pat dry and cut along the backbone with poultry scissors; open the back slightly, push the breast down a bit and lift the legs.

    Rinse the basil, shake dry and finely chop the leaves. Peel the garlic, press it in and mix with lemon juice, zest, 6 tbsp oil, salt, pepper and paprika.

    Brush the meat with the marinade and place on the hot grill. Grill for about 20-25 minutes, turning occasionally and brushing with more marinade.

    Serve plated on a plate. Optionally serve with a tomato-bean salad alongside the grilled chicken.
