Asian Noodles with Leek and Scampi from the Wok

Ingredients
- 250 g shrimp (peeled and deveined)
- 200 g mie noodles
- Salt
- 1 stalk leek
- 300 g carrots
- 2 tbsp sesame oil
- 2 tsp freshly chopped ginger
- 125 ml broth
- 1 tbsp soy oil
- pepper (ground)
- 5 tbsp Soy sauce
- 4 tsp Sambal oelek

Wash and pat the shrimp dry. Cook the noodles in boiling salted water until al dente, drain, rinse with cold water, and set aside. Clean and slice the leek into strips. Peel and slice the carrots into strips.

Heat 2 tbsp sesame oil in a wok or large pan. Stir-fry the leek and ginger for about 2 minutes. Remove, add the carrots to the wok, stir-fry, pour in the broth, cover, and cook for about 5 minutes. Remove again.

Fry the shrimp in soy oil for about 2 minutes, then add the vegetables, noodles, soy sauce, and sambal oelek, stirring and heating through. Season to taste and serve on plates.
