Green Bean Salad with Shallots

Discover a summery green bean salad with shallots as a quick lunch or side dish.

Ingredients

  • 600 g green beans
  • Salt
  • 250 g shallots
  • 2 tbsp olive oil
  • 100 g pine nuts
  • 1 tsp maple syrup
  • 6 tbsp white balsamic vinegar
  • Pepper

Instructions

    Clean the beans, trim ends and remove strings. Then boil in plenty of salted water for about 8 minutes until al dente. Clean the shallots, quarter or sixth them. Heat oil in a pan and sauté the shallots over medium heat.

    Add the pine nuts and toast briefly. Drizzle everything with maple syrup and stir in the vinegar. Drain the beans, add them to the pan, mix well and season with salt and pepper. Serve warm or cold.
