The Three-Bean Salad from Spoonsparrow comes quickly to the table and keeps you full for a long time – the perfect combination!
Ingredients
- 250 g princess beans
- 250 g green beans
- Salt
- 250 g thick beans (cut in half)
- 4 stalks bean sprout
- 2 shallots
- 1 Garlic clove
- 3 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 5 tbsp olive oil
- Pepper

Clean and wash the princess and green beans, then boil them in lightly salted water for about 7 minutes until just tender; add the thick beans after 3–4 minutes. Drain, rinse with cold water, and let drain.

Meanwhile, wash the bean sprout, pat dry, and tear into small pieces. Peel and finely chop the shallots and garlic. Whisk together vinegar, mustard, and olive oil to make a dressing; season with salt and pepper.

Combine the three beans with the dressing and bean sprout, then let rest for about 15 minutes. Serve the salad in deep bowls.
