Ingredients

  • 1 large cucumber
  • 2 tbsp salt
  • 1 tbsp Sesame oil
  • 1 tbsp dark soy sauce
  • 2 tsp sugar
  • 2 tbsp rice vinegar
  • 2 tbsp pickled ginger

Instructions

    Wash the cucumber and shave it into very thin long slices. Sprinkle the cucumber slices with salt and let them drain in a sieve for 45 minutes. Then rinse under running water and pat dry.

    Drain the ginger and cut it into thin strips. Mix the ginger with the remaining ingredients and combine with the cucumbers, letting it sit for about 15 minutes. Then arrange on a plate for serving.
