Arugula tomato salad with avocado from Spoonsparrow is always well received.
Ingredients
- 0.5 handful chives
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp fruit vinegar
- Sea salt
- Pepper
- 4 handful arugula (about 100 g)
- 200 g Cherry tomatoes
- 2 Avocados

For the dressing, finely slice the chives into small rolls and mix with the oil, lemon juice, vinegar, salt, and pepper.

Rinse the arugula and spin dry. Wash and halve the tomatoes. Halve the avocados, remove the pit, peel, and slice the flesh (if the salad will not be served immediately, drizzle the avocado slices with lemon juice to prevent browning).

Arrange the arugula, tomatoes, and avocado on four plates and drizzle with dressing before serving.
