Arugula Mushroom Salad

We love arugula mushroom salad! Prepare the juicy arugula mushroom salad à la Spoonsparrow.

Ingredients

  • 200 g mushrooms
  • 1 onion
  • 5 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 1 tsp Oregano
  • 1 bundle arugula
  • 10 Cherry tomatoes
  • 2 tbsp balsamic vinegar
  • 40 g parmesan (chunked)

Instructions

    Clean and halve the mushrooms. Peel, halve, and slice the onion into thin strips. Heat 2 tablespoons of oil in a pan and sauté the mushrooms and onions while stirring until all liquid has evaporated. Season with salt, pepper, and oregano.

    Wash, dry, and tear the arugula leaves into smaller pieces. Wash and halve or quarter the cherry tomatoes. Arrange the arugula on a plate, lightly season with salt, and drizzle with vinegar and the remaining oil. Top with the mushrooms and tomato halves, then shave parmesan over the top. Serve immediately.
