Colorful Red Cabbage Salad

Vibrant red cabbage salad from Spoonsparrow: Light and vegetarian to keep you energized through the workday!

Ingredients

  • 70 g peanuts
  • 350 g red cabbage
  • 1 small red onion (30 g)
  • 2 Apples
  • 0.5 lemon (juice)
  • 3 Carrots
  • 1 handful herbs (coriander, mint)
  • 10 g ginger (1 piece)
  • 3 tbsp Gochujang (Korean spice paste; Asian grocery store)
  • 2 limes (juice)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 tbsp sesame oil
  • Salt
  • Pepper

Instructions

    Roast peanuts in a hot, dry pan over medium heat for 3 minutes; then cool and roughly chop. Meanwhile, clean, wash, pat dry the red cabbage and shred into fine strips.

    Peel and finely dice the onion. Wash, quarter, core, and slice or shred the apples into thin sticks, then mix with lemon juice. Peel and cut the carrots into thin sticks or shred them as well. Rinse the herbs, shake dry, set aside a few leaves, and chop the rest finely. Add the prepared salad ingredients with half of the peanuts to a bowl.

    For the dressing, peel and grate the ginger. Whisk together the spice paste, ginger, lime juice, soy sauce, honey, sesame oil, and 1–2 tbsp water. Season with salt and pepper, then pour over the salad. Mix well, plate, top with remaining peanuts and herb leaves, and serve.
