Ingredients
- some butter (for the pan)
- 1 package puff pastry (230g, from the refrigerated section, about 32cm diameter)
- 200 g arugula
- 1 clove garlic
- 250 g ricotta
- 1 egg yolk (M)
- 1 medium egg
- 100 ml whipping cream
- Salt
- Pepper
- nutmeg
- 125 g grated Bergkäse cheese
- arugula (for garnish)
Instructions

Grease a 28-30 cm pie tin and line with the pastry.

Clean, rinse, pat dry, and roughly chop the arugula. Peel and press the garlic. Mix ricotta with garlic, egg yolk, egg, and cream. Season with salt, pepper, and nutmeg. Fold in the arugula and 100 g Bergkäse cheese.

Spread the mixture over the pastry. Sprinkle with the remaining Bergkäse cheese. Bake in a preheated oven at 180-200°C (gas: level 3-4, fan: 160-180°C) for 25-30 minutes. Serve the quiche garnished with arugula.
