Arugula Penne with Cherry Tomatoes & Garlic: In this vegetarian pasta, the macronutrients carbohydrates, protein and fat are optimally distributed.

Ingredients

  • 6.17 oz Cherry Tomatoes
  • 1 Garlic clove
  • 3.5 oz Arugula (1 bunch)
  • 5.3 oz Penne (preferably whole wheat)
  • Salt
  • 2.8 oz Pecorino (1 piece)
  • 1.8 fl oz Olive oil
  • Sea salt
  • Pepper

Instructions

    Wash and halve the tomatoes.

  2. 2.

    Peel the garlic and slice it finely. Wash, spin dry, and roughly chop the arugula.

  3. 3.

    Cook the penne al dente in plenty of salted water according to package instructions. Meanwhile, grate the cheese.

    Heat the oil in a large pan and sauté the garlic slices until golden. Add the tomatoes and simmer gently until softened.

    Drain the penne in a sieve and add it to the tomatoes with the arugula, season with sea salt and pepper, and mix well. Serve sprinkled with cheese.
