Ingredients
- 200 g Flour
- 100 g butter
- 1 Egg white
- 1 Zucchini
- 200 g Cherry tomatoes
- 200 g Goat cheese
- 4 eggs
- 2 tbsp Cornstarch
- 1 tbsp Fresh thyme leaves
- Salt
- Pepper
Instructions

Knead flour, butter, egg white and a little salt into a dough, roll it thinly and use it to line the bottom and sides of four tartlet molds or a tart pan.

Cut zucchini, cherry tomatoes and goat cheese into cubes.

Preheat the oven to 200 °C. Mix eggs and cornstarch. Add goat cheese, zucchini, cherry tomatoes and thyme leaves, season everything with salt and pepper. Pour the mixture onto the dough and bake the goat cheese quiche for about 25 minutes in the oven. Serve warm or cold.
