Arugula and Watercress Goat Cheese Bites

The goat cheese bites with arugula and watercress from Spoonsparrow are quick to make and even quicker to eat.

Ingredients

  • 40 g arugula (0.5 bunch)
  • 1 packet watercress
  • 100 g firm goat cream cheese (20% fat)
  • 50 g low‑fat quark
  • Salt
  • Pepper

Instructions

  1. 1.

    Wash the arugula, pat dry and finely chop. Cut a handful of watercress from the bed.

  2. 2.

    In a bowl combine the goat cream cheese, low‑fat quark, chopped arugula and half the watercress with a teaspoon; season with salt and pepper.

  3. 3.

    Using wet hands or a small ice cream scoop form 10 small balls from the mixture. Place them in paper molds and top with the remaining watercress.
