Apricot Fruit Spread with Orange

Ingredients

  • 200 g dried apricots
  • 400 ml freshly squeezed orange juice
  • 0.25 tsp ground vanilla
  • 1 pinch cinnamon
  • 0.5 tsp grated lemon zest
  • 3 tbsp ground almond kernels
  • 10 ml cognac
  • 1 orange
  • mint (for garnish)

Instructions

    Dice apricots and soak in orange juice for 6 hours. Then add vanilla, cinnamon, and lemon zest and blend.

    Fold in almonds and depending on consistency add a little more orange juice or more almonds, season with cognac.

  3. 3.

    Thoroughly peel the orange with a sharp knife, removing all white membranes and cutting out nice fillets along the segments. Fold orange fillets in and garnish with mint.
