Ingredients

  • 50 g walnut kernels
  • 0.5 lemon
  • 1 ripe pear
  • 100 g goat cream cheese
  • 2 tbsp yogurt (0.3% fat)
  • Salt
  • Pepper
  • 3 tortilla sheets (preferably whole wheat)
  • 120 g turkey ham slices
  • a few arugula leaves and radicchio

Instructions

  1. 1.

Coarsely chop walnuts and toast them in a dry pan until lightly brown, then let cool.

  2. 2.

Squeeze 1 tsp juice from half a lemon. Wash the pear, halve it, and remove the core with a small spoon.

  3. 3.

Cut the pear into fine sticks and immediately mix with the lemon juice.

  4. 4.

Whisk goat cream cheese with yogurt, salt, and pepper until smooth.

  5. 5.

Warm each tortilla sheet in a preheated oven at 80 °C (fan 60 °C) for a short time. Place each sheet on a large piece of plastic wrap and spread a thin layer of the cheese mixture.

  6. 6.

Lay turkey ham slices side by side on the sheets.

  7. 7.

Evenly distribute walnuts and pear sticks over the sheets.

  8. 8.

Roll each sheet tightly and wrap in plastic; twist the ends to secure. Chill for 20 minutes.

  9. 9.

Unwrap the tortillas and cut into individual pieces. Wash, dry, and finely chop arugula and radicchio. Serve the rolls with the greens.
