Artichokes with Vegetables

Ingredients

  • 16 artichokes
  • 250 g onions
  • 200 g shallots
  • 100 g carrots
  • 2 lemons
  • 250 ml dry white wine
  • 150 ml olive oil
  • Salt
  • pepper (ground)
  • 1 tbsp thyme, finely chopped

Instructions

    Peel and finely chop the onions, shallots, and carrots; mix with 2 tbsp oil and place in a baking dish.

    Wash the artichokes, break off the stems, remove dry leaves. Using scissors cut remaining leaves to about 3 cm height, discard the fluff. Immediately drizzle artichokes with lemon juice, season with salt and pepper, and set on top of the vegetables. Sprinkle thyme, drizzle remaining olive oil over them, add wine and about 200 ml water.

    Cover the dish with foil and bake for approximately 2 hours at 120°C.

    Remove the artichokes, place on a plate, fill with the vegetables, and spoon the cooking liquid over them.
