Artichoke Hearts with Rice-Paprika Filling

Ingredients

  • 250 g natural rice
  • Salt
  • 2 tbsp white wine vinegar
  • 16 artichokes
  • 2 yellow bell peppers
  • 4 sprigs dill
  • 1 tbsp Lemon Juice

Instructions

    Cook rice in boiling salted water according to package instructions until al dente.

    Meanwhile bring about 1 l water with 1 tsp salt and vinegar to a boil in a pot.

    Clean the artichokes and simmer them for about 35 minutes until tender.

  4. 4.

    Wash, halve, clean and slice the bell peppers into thin strips. Wash dill, shake dry and chop.

  5. 5.

    Mix pepper strips and lemon juice into the rice, season with salt and let cool.

    Remove artichokes from the liquid, rinse and drain. Fold dill into the rice. Stuff the rice into the artichoke hearts and arrange on a plate.
