Ingredients

  • 8 small artichokes
  • 1 tbsp Lemon Juice
  • 2 cloves garlic
  • 1 tbsp Olive Oil
  • 5 eggs
  • Salt
  • black pepper (freshly ground)
  • a pinch chili powder
  • 2 tbsp chopped parsley

Instructions

    Clean and wash the artichokes, remove the tough outer leaves, trim the stems, peel the stems, and quarter whole artichokes (remove the choke if present, depending on size). Drizzle the quarters with lemon juice.

    Preheat oven to 200°C (400°F) fan‑fry. Peel the garlic cloves, press them lightly with the heel of your hand, then sauté in a large pan over hot oil. Remove and add the artichokes; cook for about 10 minutes, turning occasionally.

    Whisk the eggs and season with salt, pepper and chili. Sprinkle parsley on top and pour the egg mixture evenly over the artichokes. Bake in the preheated oven for 5–10 minutes until set.
