Artichokes with Yogurt Sauce

Ingredients

  • 2 artichokes
  • 2 thick lemon slices
  • 250 g yogurt
  • 1 tsp Mustard
  • 2 Garlic cloves
  • 0.5 bunch dill
  • 4 lemon wedges

Instructions

    Wash the artichokes, trim stems and leaf tips, and cover the cut surfaces with a slice of lemon, securing them with kitchen twine. Heat water in a large pot and simmer the artichokes covered for 40 minutes.

    Whisk yogurt with mustard and squeeze in the garlic cloves. Season with salt and pepper. Wash dill, finely chop, set aside some tips, and mix the rest in. Drain the artichokes, remove lemon slices, and scrape out inner leaves and fine hairs with a teaspoon. Spoon the yogurt cream over the artichokes and top with dill.
