Artichoke Salad with Tomatoes

The artichoke salad with tomatoes by Spoonsparrow is especially delicious as a summer starter for Mediterranean dishes.
Ingredients
- 2 large cans of artichoke hearts (450 g drained weight)
- 250 g Cherry Tomatoes
- 6 tbsp lime juice
- Salt
- Pepper
- 4 tbsp olive oil
- 0.5 bunch Parsley
- 1 tbsp dried thyme
- 400 g sliced chicken breast
- 4 sprigs thyme for garnish
Instructions

Place the artichokes in a colander and drain. Catch 4 tablespoons of the artichoke liquid and put it into a small bowl for the dressing.

Cut the artichokes into quarters or sixths depending on size. Wash and halve the tomatoes. Add lime juice, oil, thyme, salt, and pepper to the artichoke broth, stir well, pour over the vegetables, mix, and let sit briefly.

Wash the parsley, shake dry, finely chop, and fold into the salad. Divide the salad onto four plates, top with sliced chicken breast, and garnish with thyme sprigs before serving.
