Ingredients

  • 6 small artichokes (or 2 cans artichoke hearts)
  • 2 whole lemons
  • 200 g mushrooms
  • 2 Tomatoes
  • Salt
  • pepper from grinder
  • 4 tbsp olive oil

Instructions

    Trim the stems of the artichokes. Slice off the top with a sharp knife, remove the lower tough leaves and cut any hard leaf tips with kitchen scissors. Quarter the artichokes. Halve one lemon; slice half into rounds, squeeze juice from the other.

    Bring plenty of salted water to boil with the lemon slices, add the artichokes and simmer for 10–15 minutes over medium heat until firm. Drain and let cool.

    Clean the mushrooms and cut them into thick slices. Wash, dry, halve the tomatoes, remove seeds and chop into coarse cubes.

    Arrange the artichoke quarters, mushroom slices and tomato cubes on serving plates. Drizzle with lemon juice, season generously with salt and pepper, then drizzle olive oil over the top. Slice the remaining lemon lengthwise into eighths and arrange in the salad.
