Arme Ritter with Plum Filling

Ingredients
- 500 g stale loaf white bread (or 6-8 rolls)
- 375 g plum jam (possibly pureed)
- 3 egg yolks
- 50 g sugar
- 1 pinch salt
- 0.5 lemon (unprocessed)
- 0.5 l milk
- 2 egg whites
- 2 tbsp water
- breadcrumbs
- butter for frying
- cinnamon-sugar mix
Instructions

Slice the bread into about 3/4 cm thick slices, spread plum jam on them, stack two slices together and press lightly; place in a shallow dish.

Whisk the egg yolks with sugar, grated lemon zest, salt, and milk. Pour over the bread slices and let soak.

Meanwhile, heat enough butter in a tall pan so that the French toast can almost "float" in it.

Beat the egg whites with water and pour into a deep bowl. Put breadcrumbs on another plate. Dip the French toast in the beaten eggs and then in breadcrumbs, frying both sides until golden brown in the hot fat.

Immediately after frying, sprinkle the pastry with cinnamon sugar and serve quickly.
