- 500 g waxy potatoes
- 1 hard-boiled egg
- 1 Shallot
- 100 g quark
- 75 g sour cream
- 1 tbsp chives
- Salt
- ground pepper (from the mill)
- ground caraway seeds
- 4 slices farmers bread

Wash the potatoes, steam for about 30 minutes until cooked, peel, let them cool slightly, and mash. Peel the egg and roughly chop it. Peel the shallot, finely dice it, and whisk it into the quark and sour cream until smooth.
