Apricots in Spiced Syrup

Apricots in a fragrant spice broth – a fresh stone fruit recipe from the Spoonsparrow collection.

Ingredients

  • 12 ripe apricots
  • 1 packet vanilla sugar
  • 1 stick cinnamon
  • 1 piece orange zest
  • 250 g raspberries
  • Lemon juice
  • Mint leaves
  • powdered sugar (for dusting)

Instructions

    Briefly dip the apricots in boiling water, remove them, shock in cold water, peel, halve and remove the pits.

    In a shallow pot combine 4 tbsp water, vanilla sugar, cinnamon and orange zest; place the apricot halves inside and bring to a boil. Remove from heat and let the fruit steep for 10 minutes.

    Sift the raspberries, arrange the apricot halves on plates, pour the syrup over them, and garnish with raspberries and mint leaves before dusting with powdered sugar.
