Ingredients
- 1 kg apricots
- 1 cinnamon stick
- 1 untreated lemon (zest and juice)
- 1 kg sugar
- 2 Oranges (juice)

Parboil the apricots, shock in ice water, peel, halve, pit, and cut into pieces. In a pot with 800 ml water bring to a boil. Add the cinnamon stick and lemon zest and simmer for about 15 minutes. Cool, then strain through a cloth-lined sieve. Squeeze out all liquid and return the juice to the pot. Add sugar with the lemon and orange juices, stirring occasionally, and reduce to about 1 liter of syrup over roughly 30 minutes.

Fill prepared bottles. Seal tightly and let cool completely.

Serve best diluted with sparkling water.
