Apple Crème Brûlée

Ingredients
- 4 firm apples
- 200 ml milk
- 200 ml whipping cream
- 40 g sugar
- 2 tbsp vanilla sugar
- 4 egg yolks
- 2 tbsp brown sugar (for dusting)

Preheat the oven to 160°C with fan and top heat.

Wash the apples and cut off a lid from each. Core the apples, leaving a 6-8 mm thick wall. Place them in a baking dish (or casserole dish).

Bring the milk with the cream, sugar and vanilla sugar to a boil. Remove from heat. Whisk the egg yolks in a bowl and gradually pour the hot vanilla cream into the mixture while stirring. Fill the apples with the custard, add a little water to the baking dish, and bake in the preheated oven for about 35 minutes until set. Remove, cool, and chill in the refrigerator for at least 2 hours.

Before serving sprinkle each crème with brown sugar, caramelize it with a torch or under a hot grill until golden brown, and serve.
