Apple Cream with Goat Cheese and Arugula

Ingredients

  • 2 apples (Boskop)
  • 2 tbsp honey
  • 0.5 lemon (juice)
  • 1 star anise
  • 100 g goat fresh cheese
  • 2 tbsp heavy cream (or goat milk)
  • Salt
  • white pepper (freshly ground)
  • a handful arugula
  • 1 tbsp white balsamic vinegar
  • 1 tbsp Olive Oil
  • goat cheese chips (optional)

Instructions

  1. 1.

    Peel the apples, quarter them, remove the core and dice the quarters. In a closed pot bring honey, lemon juice, star anise and a splash of water to a boil. Simmer gently for 10‑15 minutes until the apples break down. Remove the star anise and let the compote cool.

    Whisk the goat cheese with the cream until smooth and season with salt and pepper.

    Wash, dry, and tear the arugula into bite‑sized pieces. Whisk the balsamic vinegar with oil, season with salt and pepper, and fold in the arugula.

    Fill four glasses with the compote, spread the cheese cream on top, and arrange the arugula over it.

    Serve garnished with goat cheese chips if desired.
