Apricot Skewers with Rosemary

The apricot skewers with rosemary by Spoonsparrow are a great grilled dessert.

Ingredients

  • 12 large apricots
  • 8 sprigs of rosemary (long and sturdy)
  • 350 g soy yogurt alternative
  • 1 tsp Mustard
  • 0.25 tsp turmeric powder
  • Salt
  • Pepper
  • 4 tbsp olive oil
  • chili flakes

Instructions

    Wash the apricots, halve them and pit them.

    Wash the rosemary and pat dry; strip off needles but leave a few decoratively on top of each sprig. Point the sprigs with a knife and thread three apricot halves onto each sprig.

    Grill the apricot skewers on a hot grill for a total of 4–8 minutes from both sides until they get a grill pattern. Meanwhile stir together the soy yogurt alternative with mustard, turmeric powder, salt and pepper.

    Arrange the apricot skewers on plates, drizzle them with olive oil and sprinkle with chili flakes. Serve the dip separately.
