Grilled Fruit Skewers

Light dessert: Grilled fruit skewers from Spoonsparrow are perfect to finish a successful barbecue.

Ingredients

  • 2 EL plant oil
  • 2 EL brown sugar
  • 2 EL freshly squeezed lime juice
  • 1 TL cinnamon
  • 1 EL chopped mint
  • 2 Granny Smith apples
  • 2 Bananas
  • 2 peaches
  • 4 kiwis
  • 1 baby pineapple
  • 16 strawberries
  • wooden skewers (soak in cold water 10 min before grilling)

Instructions

    Wash apples, quarter, core and cut into pieces. Peel bananas and slice thickly. Wash peaches, halve, core and cut into bite-sized pieces. Peel kiwis, cut into wedges and split crosswise. Peel pineapple, quarter, remove stem and cut into bite-sized pieces. Wash strawberries, trim stems and halve.

    Heat grill. Mix sugar, oil, lime juice, cinnamon and mint leaves. Stir until sugar dissolves. Thread fruits onto skewers in any order. Brush with the sugar glaze and grill for about 4-8 minutes, turning frequently. Serve grilled fruit skewers with low-fat crème fraîche or vanilla ice cream.
