Apricot Sauce from Spoonsparrow: From ripe apricots in no time a fruity summer sauce

Ingredients

  • 500 g apricots
  • 1 piece ginger (2 cm)
  • 1 Vanilla bean
  • 75 g raw cane sugar
  • 1 cinnamon stick

Instructions

  1. 1.

    Wash and pit the apricots. Peel the ginger. Split the vanilla bean lengthwise and scrape out the seeds with a knife.

    Bring 250 ml water with ginger, vanilla bean and seeds, and the cinnamon stick to a boil. Add the apricots and simmer for 6–8 minutes until soft.

    Remove from heat and let cool. Remove the ginger, vanilla bean and cinnamon stick and blend with an immersion blender until smooth.
