Apple Almond Cake

Ingredients
- 500 g flour
- 1 cube yeast
- 0.25 l lukewarm milk
- 100 g sugar
- 1 egg
- 1 pinch salt
- 0.5 untreated lemon (grated zest)
- 1 tsp cinnamon powder
- 60 g Butter
- fat (for the tray)
- Breadcrumbs (for dusting)
- 2 kg apples
- 2 lemons (juice)
- 125 g almond slivers

Add flour to a mixing bowl, press a well in the center and crumble the yeast into it. Stir in some milk and flour from the edge, cover and let rise for about 15 minutes. Add the remaining milk with half of the sugar, the egg, salt, lemon zest and half of the cinnamon. Place butter in small flakes on the rim and knead everything into a smooth dough. Cover and let rise again for another 30 minutes at a warm spot.

Grease a baking tray and dust it with breadcrumbs. Knead the yeast dough once more, roll it out onto the tray and let it rest. Preheat oven to 200°C. Peel, quarter, core and cut the apples into small pieces, immediately drizzle with lemon juice and mix in the remaining sugar and cinnamon. Spread the apple slices with almonds on top of the yeast dough and bake for about 40 minutes.
