Almond Biscuit

Ingredients

  • 4 eggs
  • 50 g sugar
  • 2 Tbsp hot water
  • 100 g sugar
  • 1 packet vanilla sugar
  • 150 g ground almond kernels
  • 1 pinch iodized salt
  • 1 tsp Baking powder

Instructions

    First line a springform pan (for cake base) or a baking sheet (for biscuit rolls) with parchment paper and preheat the oven to 175°C fan.

    Separate the eggs, beat the egg whites slowly until stiff while folding in 50 g sugar. Whisk the yolks with hot water and sugar until pale and creamy. Add the meringue, vanilla sugar and almonds and fold well. Also add salt and baking powder.

    Pour the batter into the pan or spread it on the sheet, put in the oven and bake (springform about 45 min., sheet about 20 min.). Test with a wooden skewer. Transfer the finished biscuit onto a damp cloth, remove pan or sheet, wet the parchment paper well and peel off.
