Apricot Jam

Ingredients
- 1 Organic Orange
- 1 Vanilla bean
- 300 g fresh apricots
- 2 tsp honey (for additional sweetness)
- 4 small chopped dates (or 2 tbsp dried figs)

Wash the orange hot, grate about 1 tsp of zest from the surface and squeeze out the juice. Split the vanilla bean lengthwise with a sharp knife and scrape out the seeds with a small spoon.

Wash the apricots, halve and pit them. Cook the fruit with orange zest and juice, vanilla seeds and bean, and about 50 ml water in a covered pot for a short time until it boils. Reduce heat to low, steam for 5 minutes. Remove the lid and simmer the jam for 20-25 minutes until almost all liquid has evaporated. Stir occasionally.

Finally remove the vanilla bean and sweeten the jam with honey. Whip the jam with a hand blender until smooth, fold in the dried figs or chopped dates, and bring it to a boil again. Cool and pour into a clean screw‑cap jar.
