Ingredients
- 5 tbsp Amaretto
- 3 tbsp raw cane sugar
- 200 g frozen cherries
- 250 g mascarpone
- 1 tbsp powdered sugar from raw cane sugar
- 2 tbsp ground almonds
- 200 ml whipping cream
- 1 tsp instant gelatin
- 8 Amarettini
- 8 lemon balm leaves
Instructions

Bring 2 tbsp Amaretto with raw cane sugar to a gentle boil in a small saucepan. Add cherries and heat until warm, then let cool.

Whisk mascarpone with powdered sugar, remaining Amaretto, and almonds. Beat cream until stiff peaks form and fold in instant gelatin. Fold the mascarpone mixture into the whipped cream using a whisk.

Drain cherries and layer them with the cream in glasses. Chill for 30 minutes. Serve garnished with Amarettini and lemon balm leaves.
