Ingredients

  • 200 g Spelt flour Type 1050
  • 1 pinch salt
  • 2 tbsp honey
  • 300 ml milk (3.5% fat)
  • 4 eggs (size M)
  • 2 tart apples (Cox Orange or Boskop)
  • 4 tsp butter
  • 0.25 tsp ground cinnamon
  • 1 tsp raw cane sugar
  • 300 g vanilla ice cream

Instructions

    For the pancake batter, mix flour, salt and honey and whisk in milk and eggs. Let the batter rest for 30 minutes.

    Wash the apples and use an apple corer to remove the core. Slice the apples thinly.

    Bake a total of four pancakes one after another. In a pan heat 1 tsp butter, add some apple slices, pour ¼ of the batter into the pan, spread evenly by tilting and cook 1–2 minutes until golden brown. Flip and bake for another 1–2 minutes. Use up the remaining batter in the same way.

    Mix sugar with cinnamon. Sprinkle the pancakes thinly with this mixture and serve each with a scoop of vanilla ice cream.
