Ingredients

  • 450 g flour
  • 200 g Low-fat quark
  • 2 Eggs
  • 4 tbsp milk
  • 6 tbsp vegetable oil
  • 1 packet baking powder
  • 150 g sugar
  • 7 apples (e.g., Boskop)
  • 350 ml apple juice
  • 1 packet vanilla pudding powder (for 500 ml liquid)
  • 3 tbsp sugar
  • 0.5 tsp cinnamon
  • 5 egg whites
  • a pinch of salt
  • 150 g powdered sugar
  • 300 g flour
  • 150 g sugar
  • 1 Tbsp vanilla sugar
  • 170 g softened butter

Instructions

    Preheat the oven to 180°C (350°F) with top and bottom heat.

    Knead all dough ingredients together and line a greased baking pan with it.

    For the topping, peel, quarter, core, and slice apples into thin strips. Toss immediately with lemon juice. Mix pudding powder with sugar and cinnamon and whisk in one third of the apple juice. Bring the remaining apple juice to a boil, stir in the prepared pudding mixture, and simmer until thickened. Set aside to cool slightly. Fold in the apple pieces. Spread the apple mixture over the dough.

    Beat egg whites with a pinch of salt and powdered sugar until stiff peaks form; spread over the apple layer. Bake in the preheated oven for about 20 minutes.

    Meanwhile, mix flour, sugar, vanilla sugar, and butter into a crumbly dough, then rub between hands to form streusel crumbs. Sprinkle over the cake and bake another 20–25 minutes until golden. Remove from oven, cool, cut into pieces, and dust with powdered sugar before serving.
