Apricot Dumplings

- 1 kg starchy boiled pre-cooked potatoes
- 3 egg yolks
- flour (as needed)
- 800 g apricots
- a pinch of salt
- salt water (for boiling)
- 150 g butter
- 150 g breadcrumbs
- powdered sugar (for dusting)

Peel the potatoes and press them through a masher. Mix with salt, egg yolks, and flour into a dough that is not too firm. Roll out the dough on a floured board. Boil water over apricots, then peel and pit them. Insert half a cube of sugar into each apricot.

Cut the rolled-out dough into 5x5 cm squares. Place an apricot in the center of each square and shape into a dumpling. Cook the dumplings in boiling salted water for about 15-20 minutes until cooked through. Meanwhile, melt butter and toast the breadcrumbs until golden brown. Remove the dumplings with a slotted spoon, let them drain, toss in the toasted breadcrumbs, and place on a pre-warmed plate. Dust with powdered sugar.
