Ingredients

  • 120 g butter
  • 150 g sugar
  • 2 Eggs
  • 250 ml buttermilk
  • 0.5 tsp Baking soda
  • 1 tsp Baking powder
  • 120 g corn grits
  • 120 g flour
  • 0.5 tsp Salt

Instructions

    Preheat the oven to 175 °C and grease the muffin tins.

    Mix buttermilk with corn grits, flour, baking powder and baking soda; let sit briefly.

    Melt butter in a saucepan, add sugar, remove from heat, cool slightly, then whisk in egg yolks until creamy. Beat egg whites into stiff peaks.

    Fold the yolk mixture into the batter and gently fold in the meringue.

    Divide the batter among the tins and bake for about 30 min (do a toothpick test).
