Almond Cookies

Ingredients

  • 250 g butter
  • 150 g sugar
  • 3 eggs
  • 300 g flour
  • 50 g ground almonds (peeled)
  • 1 tsp Baking Soda
  • a pinch of salt
  • 40 g lemon zest
  • 60 g almond flakes
  • 100 g powdered sugar
  • 1 tsp lemon juice
  • sugar (for dusting)
  • lemon zest (thin strips)

Instructions

    Cream the butter with the sugar. Add the eggs and beat until light and fluffy. Mix the flour with the almonds, baking soda, and salt, then fold into the butter mixture to form a smooth dough. Finely chop the lemon zest and incorporate it with the almond flakes.

    Preheat the oven to 180°C (356°F) fan‑forced.

    Using a spoon, scoop small portions of dough onto a parchment‑lined tray, leaving ample space between them so they spread during baking. Bake for 10–15 minutes until golden brown. Carefully remove from the tray and cool on a wire rack.

    For decoration, whisk powdered sugar with lemon juice into a thick glaze. Fill a piping bag and decorate the cookies. Dust with sugar and arrange lemon zest strips to dry.
