Ingredients

  • 150 g butter
  • 5 egg whites
  • 250 g powdered sugar
  • 135 g ground almonds
  • 60 g flour
  • 1 untreated orange (zest)
  • butter (for the molds)
  • 6 tbsp almond flakes

Instructions

    Preheat the oven to 230°C. Grease the financier molds well.

    Melt the butter over medium heat, optionally frothing it slightly until lightly browned (nutty butter). Let it cool to room temperature.

    In a large mixing bowl beat the egg whites into stiff peaks. Add sifted powdered sugar, almonds, sifted flour and grated orange zest; fold in the butter and gently fold everything together.

    Fill the financier molds about two‑thirds full with the batter and sprinkle almond flakes on top. Bake at 230°C for about 5 minutes, then bake another 5 minutes at 200°C. Turn off the oven and leave the cakes in the oven for an additional 5 minutes.

    Let the financiers cool slightly, but remove them from the molds while still warm.
