Almond Pear Cold Bowl with Grapes

Ingredients

  • 200 g peeled almond kernels
  • 800 ml milk
  • 0.5 Vanilla bean
  • 60 g sugar
  • 2 pears
  • 2 tbsp Cornstarch
  • 300 g green grapes
  • 1 tbsp Lemon Juice
  • 1 tbsp sugar
  • pepper (ground)

Instructions

    For the soup, toast the almonds in a dry pan until golden brown, let cool and grind finely (hand blender or similar). Heat the milk (leaving 50 ml aside) with the split vanilla bean, sugar and almonds.

    Peel, halve, core the pears and dice the flesh into small cubes.

    Whisk the cornstarch with the remaining milk until smooth. Stir into the hot vanilla milk, add the pears and simmer gently for about 10 minutes while stirring to thicken slightly. Remove the vanilla bean, puree the soup finely and cool. Refrigerate covered until fully chilled.

    Wash the grapes, halve them, remove seeds if desired, drizzle with lemon juice and sprinkle with a little sugar. Let the fruit rest until serving.

    Pour the almond soup into bowls and arrange the grapes on top.

    Sprinkle with a pinch of pepper before serving.
