Apricot‑coconut bars by Spoonsparrow: homemade bars made from apricots and coconut for a crunchy bite when you need a quick snack!

Ingredients

  • 100 g Dried Apricots
  • 30 g butter (2 tbsp)
  • 50 g liquid honey
  • 80 g whole cane sugar (4 tbsp)
  • 0.5 organic orange
  • 100 g oat flakes
  • 50 g coconut shreds
  • 40 g chopped almonds (4 tbsp)

Instructions

    Dice the apricots for the bars.

  2. 2.

    Add butter, honey and sugar to a small pot and bring to a boil.

  3. 3.

    Rinse the half orange hot and dry it; grate 1 tsp of zest and squeeze out the juice.

  4. 4.

    Stir together 1 tbsp of orange juice and zest, oat flakes, coconut shreds, almonds and diced apricots with the sweet butter mixture.

    Spread the batter about 1–1.5 cm thick onto a baking sheet lined with parchment paper using a damp rubber spatula. Bake in a preheated oven at 150 °C (convection: 130 °C, gas: level 1‑2) on the middle rack for about 25 minutes. Let the plate cool completely, then cut into bars.
