Colorful vegetable chips from Spoonsparrow are very easy to make at home and bring many vital nutrients into your snack bowl.
Ingredients
- 200 g sweet potatoes (1 small sweet potato)
- 200 g lotus root (alternatively: 1 parsnip)
- 1 beetroot bulb (200 g)
- 200 g purple potatoes
- Vegetable oil for frying
- Salt
- Ras el-Hanout (oriental spice blend)
- Cayenne pepper
Instructions

Peel and wash the bulbs and roots, then slice them thinly. Heat oil in a pot to 170 °C. Pat the vegetable slices dry with paper towels and fry each batch separately until crisp.

Remove with a slotted spoon and drain on paper towels. Sprinkle the chips with salt, Ras el-Hanout and a pinch of cayenne pepper, then arrange them on a platter.
